Yeast paste
In a 2-L beaker, gradually mix active dry yeast (e.g., Red Star or Fleischmann’s) and H2O with a sturdy kitchen spoon or spatula. Adjust the ratio of yeast and H2O until ~1 L of paste, with the consistency of a cake frosting, is obtained. (The amount of yeast required will depend on the amount of H2O.) Leave the stirring implement in the beaker and cover the beaker with plastic wrap or foil. Place the beaker in a dish 1-2 in. deep and store it in the cold room. The yeast sometimes expands and pours out of the beaker; the dish will contain it.
